Moroccan Lamb Tagine Recipe #FamilyFavourite #ad

Finding mid-week family dishes that suit everyone can, at times be a challenge.
As a busy working mum, I want to make just one simple dish that I know the girls will all enjoy and eat up with minimal fuss.

I always get stuck in a rut and end up cooking the same things over and over. Recently I’ve been trying out some new recipes and found some real hits! As part of the #FamilyFavourite Campaign, I wanted to share one of our favourite new recipes on the blog to give a little inspiration to those whom may also stuck in a cooking rut! I love cooking with Lamb – it’s one of my favourite meats, so full of flavour and when it’s cooked right – so deliciously tender! So Lamb Tagine felt like the perfect fit.
Lamb is naturally rich in protein, low in salt and provides seven essential vitamins and minerals that supports good health and wellbeing. These are: niacin (vitamin B3), vitamins B6 and B12, zinc, potassium, phosphorus and pantothenic acid.

Now; on to the recipe. This dish can be cooked on the hob/oven or all-day in the slow cooker (perfect for us multi-tasking mums).

Lamb Tagine Recipe

Ingredients (to serve 4)

500g lean diced lamb
2 onions (diced)
3-4 carrots (diced)
1 vegetable stock cube
2 crushed garlic cloves
½ tsp cumin
½ tsp ground ginger
½ tsp coriander
½ tsp paprika
1 tsp honey
100g dried apricots, cut into quarters

Serve with couscous, plain yogurt and a quarter of fresh lime to serve.

Method (Hob/Oven)

  1. Preheat the oven to gas mark 4/180°c.
  2. Heat a little olive oil in a large pan. Gently fry the lamb until it is lightly browned all over.
  3. Add the onion and carrots and cook until they’re slightly softened.
  4. Add the garlic, spices, vegetable stock and roughly 200ml of hot water. Cook for 10 minutes on a medium heat. Then stir in the honey.
  5. Stir the apricots in and transfer to a large casserole dish. Cover and cook in the oven for roughly 1 hour 30 mins. Add a little more water if needed.

To cook in the slow cooker.

  1.  Heat a little olive oil in a large pan. Gently fry the lamb until it is lightly browned all over.
  2. Add the browned lamb, raw onions and carrots into the slow cooker.
  3. In a mixing jug combine the spices, vegetable stock, honey and crushed garlic with 200ml of hot water.
  4. Pour the mixture into the slow cooker and add the apricots.
  5. Mix a little, cover and leave on low for 6-8 hours.
    Use a little cornflour or some gravy granules to thicken up if required before serving.

Serve with steamed couscous, plain yogurt and a quarter of fresh lime.

It’s so tasty the girls and I love it. It’s also a really great recipe to batch cook in the slow cooker and freeze for the following week, a great way to meal prep and save time!

    I love that this can be cooked in the slow cooker! i am a massive slow cooker love so recipes like this are ace!
