Healthy Breakfast Made Easy – Acai Bowl

New year, new you? Yeah it’s my plan too. Although the last few weeks I have found my energy levels so low that one of my resolutions has started a little early.

That one is to eat a decent healthy breakfast every single morning. For a number of reasons; firstly to stop me reaching for biscuits mid morning (guilty). Secondly to get in a decent portion of fruit first thing (massively failing on the 5 a day thing at the moment) and lastly to encourage an earlier start and less stressful morning. It’s so nice to get out of bed a little earlier prepare breakfast for the family and eat together. Although I’m adding in an extra task the mornings just flow so much better.

Time however is still very precious so being able to make something quickly that is healthy is a huge plus.

This is a super simple recipe for Acai Bowl which just happens to be loved by Meghan Markle herself. If its good enough for a princess it’s good enough for me!

  1. Blend one frozen Sambazon Açaí packet with 1/3 cup of almond milk, 1/2 banana, a handful of frozen berries.
  2. This should be thick so add almond milk sparingly as you go.
  3. Top with coconut flakes, fresh berries, sliced banana, a drizzle of manuka honey, sprinkle of bee pollen, and serve immediately.

Delicious!
