Encouraging my children to eat healthily is really important to me; however we all know what children are like, I spend hours prepping a lovely balanced healthy meal for them to immediately dismiss and demand toast!
The struggle is real; so sometimes I have to use sneaky tactics to get more fruit and veg into their diets. Smoothies are without a doubt one of the quickest and easiest ways to give them that vitamin C boost they need.
I have paired up with Vita Coco to share three yummy fruit smoothies you can make with your children using their Coconut Milk.
Vita Coco’s Coconut Milk is a great non-dairy alternative, it contains potassium, added calcium, vitamins and electrolytes so it’s full of goodness as well as being delicious and smooth. It works so well in a smoothie recipe as it’s made up of 60% ‘never from concentrate’ Vita Coco Coconut Water as well as 10% coconut cream and spring water.
As you all know I love getting the girls involved in the kitchen, so this seemed like the perfect opportunity to get Lottie helping me. When they have a selection of fruits and are given the choice I find they are so much more willing to try new things and make healthy decisions for themselves.
It’s also just a fun activity for them, Lottie loved helping me chop, pour and blitz. With the half term around the corner this is the perfect kind of thing to get them in on if you’re looking for easy afternoon entertainment.
Recipe 1 – Berry Good
Half a banana
Small handful of raspberries & strawberries
150ml Vita Coco Coconut milk
Recipe 2 – Green Goodness
1 kiwi scooped
Half an apple cored and chopped
Small handful of green grapes
Half an avocado
100ml Vita Coco Coconut Milk
Recipe 3 – Purple Power
Large handful of blackberries
Half a pear
150ml Vita Coco Coconut Milk
Each of these recipes contains at least 2 of your child’s recommended 5 a day so it is a brilliant way to get a boost of fruit into them in a fun way. Vita Coco’s Coconut Milk contains no added sugar and 70% coconut products, so for me it is a much better alternative to the usual fruit juices I add to smoothies.
