Cooking has always been one of my favourite activities. There’s something about finally reaching the end of a hectic day and just getting lost in the kitchen. In my house we have music on, ingredients everywhere and kids joining in. I find it so therapeutic; getting to finally sit down and have some decent food after is also a huge bonus. Since going back to work a couple of months ago I have found myself cooking the same dishes over and over or even diving into the freezer stash more than I would like. When Sacla’ recently sent me their new La Famiglia family cook book I was so excited to get in the kitchen and create some new dishes.
The cook book itself was devloped with fantastic TV chef Rachel Allen. She, like me, is a busy mum of three so creates simple yet delicious food that we can all recreate at home. I love how the book is broken down into breakfast dishes, quick lunches, midweek meal ideas (my favourite section) and lastly weekend meals. I decided to recreate the Fusilli with chicken & pesto sauce. As I always tend to do, I made a couple of changes going by what is currently in my fridge and the veg I needed to use up.
I am usually a green basil pesto kind of girl – I love the stuff – so it was really nice to try out something different. This recipe used the roasted pepper pesto it was so delicious! Definitely one I shall be reaching for again.
What I love about these ready made pesto pots is the incredible blast of flavour they give any dish. It really gives those quick mid-week dinners the wow factor. Packing it full of veg also gives your family that much needed boost of greens!
